Industrial boilers for the dairy industry and cheese making are used in various processes, such as pasteurisation, ultra-pasteurisation, cooking and dehydration. The milk's shelf life is extended by a series of steps in which the temperature must be controlled efficiently in order to destroy bacteria while maintaining the desired properties. Drying with industrial boilers for the dairy industry is one of these. It turns the product from liquid to solid, and stabilises its constituent parts so that they can be stored and used later. For example, this is the aim of ultra-pasteurisation (also known as UHT). The milk must be heated rapidly to at least 135°C, maintained at that temperature for a few seconds, and then cooled quickly to room temperature. This enables dairy products to be preserved for months.
